Bite Sized Power Bites

Bite Sized Power Bites

Adapted from Smashed Peas and Carrots (blog/recipe)

Disclaimer: There are other blogs/sites online that have a similar recipe. I was first inspired by my friend who made these bites for her daughter's first birthday. She found the recipe from Smashed Peas and Carrots.

Allergens: peanuts, hazelnuts, almonds, dairy
Ingredients are free of hydrogenated oils, high fructose corn syrup, artificial dyes, and aspartame

Ingredients:
1 cup oats
½ cup of crunchy peanut butter
1/3 cup of organic agave nectar
½ cup of organic unsweetened coconut flakes
¼ cup of almonds roasted in cinnamon, sugar and water
¼ cup of ground organic graham crackers
¼ cup of ground flaxseed (or flax seed meal)
2 tbl of nutella (optional; replace with mini chocolate chips)
¼ tsp vanilla extract
¼ tsp. cinnamon

I blend all nuts, graham crackers, and flax seeds in my Vitamix first. Then using my Kitchen Aid mixer, I add one ingredient at a time while mixing on low speed. After all ingredients are added and it feels dry, add more agave nectar as needed (you want it slightly moist). Let it set in the fridge for about an hour. Remove. Make balls using your hands or if you have a small ice cream scoop or large melon baller then that will help shape the mixture into balls. (I doubled the recipe and made half into balls and the other half into bars.) Refrigerate up to a week or freeze until ready to use.

You can substitute anything you like in this recipe.
Have fun with it! Buon Appetito!! =)

Delaney's Scavenger Hunt Meal

It's been over a month since the Scavenger Hunt at Delaney's in Old Town Temecula.

Last Wednesday, I met up with the gal who won the basket valued at over $100!! and she roasted the chicken according to the recipe and cooked quinoa on the stove top. With the grain we chose to eat it warm. I brought over some treats that I picked up from Delaney's to support another local mom, Vlada Vladic with Cooking and Kids, who has her items for sale in the refrigerated section. I brought with me the "World's Healthiest Cookie" made with raw honey, flax and walnuts - no SUGAR added!

We were hungry and the aromas from the kitchen were enticing. We prepared the plates for ourselves and our children. Everything was delicious. We got so wrapped up in eating that we forgot to pause and take a picture of the food before it was dug into! However, I still captured a picture of the last few pieces of chicken and the rest of the quinoa. Hopefully you'll still get a general idea of how yummy it was. Do check out the recipes above and make this for you and your family! (Very easy recipe.) BTW it was a whole chicken (and organic). It weighed about 3.5 lbs.

Smoothie Season

Smoothie Season is back! It should've never left but even in SoCal, the quality of fresh produce has been pathetic the last few months due to the... get this - RAIN!

Immunity Boosting Smoothie: Orange Juice (Vitamin C), *Pineapples (Antioxidants), Mango (King of Fruit), Strawberries (Vitamin K), Protein powder (Complete Vanilla), Milk Thistle (Liver Support), Flax Seed Meal (Omega 3) and Local Honey (Combats Pollen Allergies).

Mangos are known by "King of Fruit" because they are supposedly one of the most nutritious fruits on the planet.

* I wrote a blog solely on pineapples a few days ago. Be sure to read for more information on further benefits of eating pineapple. My favorite reason for eating is that it's a natural antinflammatory.
